The red peppercorn is the fruit of a large tree closely related to the pistachio tree. The berries hang in long clusters and when ripe, their outer husk takes on bright pink hues. The red peppercorn first appears to offer a fairly sweet almost sugary flavour, that becomes aromatic and hot in turn.

The dried fruit comes as a grey-green pod with three compartments containing dark brown seeds, which are the only aromatic part used as a spice. It is lemony, with a hint of pine sap and its very strong fragrance heightens the notes that it accompanies. However cardamom should be used sparingly.
